5 Magnificent Hawaiian Mixologists

BY The Editors | June 26, 2017 | Feature Features

Here are 50 of the finest things happening in Hawai‘i's food scene.
For mixologist Dave Newman of Pint + Jigger, and now Harry's Hardware Emporium, craft cocktail making is a way of life.

Taverna beverage director and partner at Perfect Pour Cocktail Co., Tara Fontaine creates elegant alchemy in a glass. Try the Pusher Man, named after a Curtis Mayfield song, which is made with Park Cognac Park Carte Blanche VS and honey chamomile syrup—the latter is a nod to her mother, who used to put chamomile tea in her baby bottle. 2000 Village Road, Kapalua, Maui, 667.2426

Building on the success of Pint + Jigger, which Dave Newman opened five years ago, the well-loved mixologist has now launched Harry’s Hardware Emporium, a Prohibition-style speak-easy in the same building. It features elegant drink-cart service, with craft cocktails made tableside, as well as custom cocktails newly imagined and tailored to each guest’s preferences. 1936 S. King St., McCully/Mo‘ili‘ili, O‘ahu, 744.9593

Popular mixologist Kyle Reutner left his role behind the bar to join the team at Manulele Distillers in West O‘ahu. A sought-after consultant who continues to build cocktail lists for places like The Pig & The Lady, he spends his days promoting small-batch farm-to-bottle Ko Hana Hawaiian Agricole Rums—carefully produced from ancient heirloom varietals of Hawaiian sugar cane. 92-1770 Kunia Road, Ste. 227, Kunia Camp, O‘ahu, 649.0830

Ross Steidel is the other half of Perfect Pour Cocktail Co., which launched in 2013 and elevated the bartending game on the Valley Isle. He finds pleasure in concocting a proper mojito, eschewing the commonly used mint simple syrup or refined sugar for double-strained muddled mint and confectioners' sugar. “It dissolves quickly and evenly, and adds viscosity and an opaque color to the mix,” says Steidel. Lahaina, Maui, 264.5725

The mixologist at Nobu Honolulu, Alicia Yamachika actually learned the art of craft-cocktail-making under the tutelage of Dave Newman. From the music made by her concoction shaking over ice to the mouthfeel of the liquid, she aims to carve out a unique and sensual experience for every patron. Nobu Honolulu, 1118 Ala Moana Blvd., Kaka‘ako, O‘ahu, 237.6999
