At Arden Waikiki, Chef de Cuisine Makoto Ono celebrates local purveyors, using the freshest local ingredients in each dish—try the Li Hing tomato salad with Kahumana Farm tomatoes, burrata and Li Hing Mui vinaigrette and the Maui Nui Venison Tartare with pickled red onion, okra and pillow toast—on the menu, which reflects chef Ono’s experiences and influences on the islands. “I want to share the diverse flavors of Hawai‘i with our guests,” he says. “I’m passionate about the culture here and love bringing that to life through our food.”

Chef Amanda Cheng is celebrated for exceptional desserts with unforgettable flavors, such as the must-try Baked Hawai‘i, a black sesame chiffon cake topped with coconut and mango sorbet in a toasted meringue with a Koloa dark rum sauce. “I like putting a twist on classic desserts,” she says. “This is the tropical version of a Baked Alaska.
