Chef Shaymus Alwin was recently invited to present a knockout dinner at the James Beard House in New York City. Fortunately for the rest of us, his resulting creations are now part of his new five-course tasting menu at The Royal Hawaiian’s seafood mecca, Azure. The feast is an homage to the chef’s childhood in Maine—but infused with local flair and ingredients. The son of a lobsterman, Alwin honors the ocean with his dishes. Think Keāhole lobster and brioche with truffle aioli—a rich but delicate nod to the simple pleasures of the lobster roll—as well as crispy-skinned seasonal fish locally sourced from Pier 38 and served in foie gras dashi. Vichyssoise is made with Kaua‘i shrimp, while the 45-day aged strip loin is served with ali‘i mushrooms and taro. Dessert highlights local lavender and macadamia nuts with a Meyer lemon cheesecake. Budding oenophiles will want to opt for the wine pairing option, where each vintage is carefully selected by sommelier Micah Suderman. As for where to sit, gourmands can enjoy the magic of the light from the sunset dancing around the indoor bar and restaurant, or dine alfresco in a beachside cabana.
