This innovative approach includes a curated selection of high-quality boxed wines from prestigious California wineries. The program replaces 1,344 bottles with just 336 boxes in the initial rollout and aims to slash Merriman’s carbon footprint by over 50%, primarily by reducing fuel consumption associated with shipping and recycling traditional glass bottles. Building on their existing sustainability efforts, Merriman’s Waimea recently became Hawai‘i’s first carbon-neutral restaurant.
