“After years of living in and out of Hawai‘i, the island’s natural beauty and quality of life brought me back,” says chef Hiro Kajita, the culinary artist behind O‘ahu’s latest omakase dinner experience, Hirokase. He hosts fully catered, hour-and-a-half private dinners in the guest’s home featuring 14 courses made from ingredients sourced locally and from Japan. He started this venture after the pandemic saw him out of work, and hosting these customized suppers has found him success ever since. Omakase, or “chef’s choice,” is a high-end extended sushi dinner prepared one course at a time that allows the guest to have an intimate experience with the food and the chef. Originally from San Francisco, chef Kajita has been making Japanese cuisine since the early 2000s, studying under master sushi chefs Morimoto and Nobu and later working as a sushi chef at Gonpachi in Tokyo.
