Only a select few are given access to this clandestine establishment within the retro Waikīkī White Sands Hotel, where mixologists craft imaginative libations awash in flavor and artistry. The moody interior, with low lighting and soft velvet, offers barely twenty seats where guests can observe the bartenders practicing their magic. For larger groups, the room gives way to a relaxed courtyard alfresco, an outdoor cabana perfectly laid back yet still intimate. Recent favorites On the Spot and Golden Age exemplify the creativity flowing from Green Lady’s shakers. Tom Kha, a popular Thai coconut soup, inspired On the Spot for a refreshing, rum-based drink with lime leaf infusion, lemongrass and coconut balancing bold umami notes. Contrast this with the floral, herbaceous whiskey sour that is Golden Age, a velvety bourbon drink kissed with citrus and egg white. For the bartenders at Green Lady, like Maddie Finnegan, the magic is in the connections made over each lovingly crafted drink. “I am elated when I watch a guest’s face light up after taking their first sip of a cocktail,” she says. “Our senses are very powerful, and having the opportunity to be creative and nostalgic, I find myself transporting people to another time and place.
