Newly relaunched, Lahaina’s oceanfront eatery, Pacific’o on the Beach, has entered its next elevated culinary phase with brand-new executive chef Isaac Bancaco at its helm. Boasting a win against Bobby Flay on Iron Chef America, Bancaco has worked hard to pioneer a delicious new menu featuring dishes made with locally caught fish including a mahimahi Wellington made with fresh lobster and puff pastry and the herb-crusted ahi with ogo vinaigrette, coconut rice and pineapple. Born and raised in Maui, Bancaco takes inspiration from his roots, drawing on childhood memories of his Hawaiian grandmother’s cooking, using homegrown ingredients and supporting local fishermen. “At Pacific’o, we cook dishes in a traditional way to bring out the best from the fresh harvest but with a sophisticated twist,” Bancaco explains. With good reason, Sushi Sho’s omakase counter books out months in advance. The on-property restaurant for The Ritz- Carlton Residences, Waikiki Beach, Sushi Sho’s exclusive sushi counter only seats 10 people and offers a one-of-a-kind dining experience; however, its new private beach experience offers new opportunities. Included in the outdoor experience is a stunning setup for two on the beach where guests can bask in the sun setting over the water and enjoy an assortment of omakase dishes.
