Every evening at Bevy, the mixologist on duty crafts a signature Cocktail of the Day and serves it, from pour to garnish, with the kind of European flourish that used to only be found stateside in five-star hotel bars. As an early member of what is now the bustling Kaka`ako nightlife scene, Bevy has well-established itself as a Honolulu cocktail-hour mainstay. We come for the drinks, but the food is not to be sniffed at. The menu—which is built around craft cocktails and includes savory bar nibbles like oysters and padrĂ³n peppers, as well as large plates—is driven by fresh seasonal ingredients, which are deployed with great creativity. Owner and award-winning Brit barman Christian Self is constantly developing new libations, like the cheekily on-trend Holy Matchamony, which blends premium Absolut Elyx with matcha, labne, honey and honeydew melon. Stay tuned for a forthcoming absinthe cocktail, among others. New on offer for daytime is Bevy Market, a New York deli-inspired salad and sandwich shop that elevates lunch hour with artisanal meats, cheeses and breads.
