Weekly Recipe: Gingerbread Cookies By Chef Saiko Izawa

‘Tis the holiday season, and that means making room in your diet for lots of cookies and cakes. The more the merrier, but the merrier when made together with the people you love right in your own kitchen.
As a gift to you and yours, executive pastry chef Saiko Izawa of the Rosewood São Paulo shares her easy-to-follow recipe for gingerbread cookies, cut into adorable shapes and decorated with royal icing, aka the perfect holiday treat for family and friends.
“My inspiration for creating this recipe was the idea of providing a simple and enjoyable way to involve children in setting up a beautiful Christmas table,” chef Izawa says. “I believe that during this year-end gathering, we can make the most of our time together, making it special and delicious. It’s a perfect moment to create special family memories.”

Gingerbread Holiday Cookies
Ingredients:
200g unsalted butter at room temperature
160g brown sugar
40g honey
80g beaten eggs
360g all-purpose flour
40g almond flour
4g ground ginger
4g ground cinnamon
2g salt
Directions:
Beat the butter, sifted sugar and honey until it doubles in volume and becomes creamy.
Add the eggs and continue to beat.
Sift the dry ingredients and combine.
Roll out to a thickness of 3mm and let it rest in the refrigerator for at least 3 hours.
Cut using themed cutters and place on a baking sheet lined with a Silpat or parchment paper.
Bake in a preheated oven at 160 degrees Celsius for 15 to 20 minutes.
After cooling, decorate with royal icing.
