GREEK SALAD WITH AN ASIAN TWIST
Serves two
INGREDIENTS
4 oz. Ho Farms tomato mix, cut in half
4 oz. Ho Farms Japanese cucumber washed and cut into ½-inch slices, and cut in half
2 oz. Kalamata olives, pitted
2 oz. Feta cheese, cut into ½ inch cubes
4-5 pc. Shiso leaves cut into ½ inch squares
1 Tbsp. Rice Vinegar
2 tsp. Shallots, minced
1/2 tsp. Yukari
2 Tbsp. Extra Virgin olive oil, Salt
STEP 1
In a small mixing bowl, mix the rice vinegar, shallots and Yukari. Allow to sit for 15 minutes, then add the Extra Virgin olive oil and mix thoroughly.
STEP 2
In a separate bowl, mix the tomatoes, cucumbers, olives, Feta cheese, and shiso. Toss lightly with the dressing and season with salt.
STEP 3
Place the desired amount together in a bowl and serve.
