After studying under Wolfgang Puck and Joël Robuchon, executive chef Noelani Planas has made her debut at Red Salt (koakea.com/red-salt), a new fine dining restaurant at the Ko‘a Kea Resort on Poipu Beach that already has the Garden Isle abuzz. A Kaua‘i native, chef Planas takes inspiration from her island heritage and combines it with classic-with-a-twist execution. Red Salt’s signature dishes include Squid Ink Tonnarelli and Blue Crab Crusted Monchong and brunch dishes like lobster benedict and lemon-pineapple soufflé pancakes. Guests can dine à la carte or opt for the private six-course dinner in an oceanfront cabana overlooking the south shore. Once a month, the restaurant hosts a Pa‘ina Dinner on the oceanfront lanai, which includes a five-course prix fixe menu with wine pairings, lei greeting and live entertainment. Such a high caliber of cuisine is a new, exciting addition to the Kaua‘i food scene.
