Much like many of the most renowned eateries in Japan, the unassuming exterior of Sushi Gyoshin (sushigyoshin.com) belies a jewel-like interior. The small, hidden gem across from the Ala Moana Center opened earlier this year and presents the creative vision of chef Hiroshi Tsuji. Tsuji worked for over two decades in Japan, perfecting his skills in washoku (Japanese cuisine) and sushi. He came to Hawai‘i to expand his culinary knowledge, and soon fell in love with the island and opened his sushi restaurant in Honolulu. This counter-only eatery has limited seats, making for a personalized and intimate high-end sushi experience. Diners can watch Tsuji craft his culinary delights using the freshest fish from Hawai‘i and Japan’s famous Tsukiji Market. Sushi Gyoshin is an Omakase sushi restaurant. Standouts from our visit included the nogoduro (blackthroat seaperch), Ishikawa snow crab hailing from the chef’s own prefecture in Japan, and homemade ginger using Japanese and Hawaiian varieties.
